I’ve tried countless amounts of fried chicken, but my favorite method for the lightest and crispiest chicken wings is inspired by a Vietnamese fish sauce wing. The light and crispy corn starch batter is superior and one of the easiest methods I’ve tried with just a single dredge step. I’ve cracked the code for the juiciest and crispiest chicken wings by using crispy cornstarch and making them lightly breaded in a convection oven, then finished in an air fryer. This way, they have that fried taste without the oil. When made in the oven, they come out extremely juicy but not crispy at all, while the air fryer makes them super crispy. The secret formula for the best of both worlds is the secret ingredient, cornstarch.

Secrets to Crispy Cornstarch Chicken Wings

In my experience, using cornstarch in fried chicken recipes really enhances the crispiness and crunch of the chicken’s coating. When added to the breading mixture, corn starch creates a lighter and crispier texture compared to just flour alone. It helps create a thin, delicate layer on the chicken that fries to a golden, crispy finish. The corn starch also aids in absorbing excess moisture from the chicken’s surface, contributing to a more enjoyable crunch. The addition of corn starch is a key element in achieving that coveted, crispy exterior when frying chicken. The secret to crispy chicken wings is, obviously, cornstarch.
